Tucked away in the middle of Estonia, this authentic approach to fresh food is the result of years of hard work of the duo. Both chefs came with our Estonian delegation to Tokyo and their cooking was an instant hit for the locals. Showcasing what our country has to offer in terms of ingredients was an eye opener to the Asian audience.
“If a customer comes in and asks for a salad in the middle of winter we have to tell them sorry, salad does not grow right now. Let me make you something else.”
They grow a lot of things onsite and have also built a summer kitchen and pergola next to the main house where hours can go by and you really don't want to get into your car to drive off.
