An unexpected experience at this drinks-led dining concept. When you hear sustainability these days, you cringe, but here everything is so subtle, nice and exactly at the right level.
Chef Doug McMaster of Brighton's zero-waste restaurant Silo has teamed up with drinks guru Mr. Lyan (aka Ryan Chetiyawardana) from White Lyan and Dandelyan to create something very unique in the London dining scene.
“We change 2-3 items on the menu each week. It all depends what our suppliers have for us, we take the lead from them.”
The set menu at £55 consists of innovative drinks and bites prepared of leftover parts of ingredients that would normally be tossed out. It is not a pairing menu though, everything arrives as it should, at its own pace and leaves enough time to appreciate each component.
