Andrey is a very engaging character. He is actually Estonian (which makes me very proud) and lives half the week in Tallinn where he manages another restaurant TAR TAR. Commuting between the two capitals keeps his approach to both kitchens fresh and adds to the quality of supply chain management.
“I am trying to use as many local ingredients as possible. The thick sour cream is coming from a local woman down the road. Such approach is fairly new on the Moscow dining scene.”
The restaurant will go under renovation in the spring to receive a design make-over and a chef's table on the second floor.
